Let’s start with some sweet. Today I made some Sooji Coconut Laddus for my 2 and half year old kid. He is a very picky eater and I thought he might try these laddus and YES he ate one laddu, he must have thought it was some kind of chocolate ball :D. It gives great satisfaction for a mother when her children eats properly. So here is the recipe.
Sooji Coconut Laddus
Ingredients:
1/2 cup fine sooji(semolina/rava)
2 cups fresh coconut powder
1 1/4 cup sugar
Few cashew nuts(optional)
1 pinch cardamom powder
2 tbsp ghee
Method:
1. Heat ghee in a pan and roast cashews till golden brown, keep aside. Then add rava and roast it in the remaining ghee in the pan till nice aroma comes.
2. Add the sugar and fry till the sugar melts, do this on a slow flame.
3. Add the grinded coconut powder and fry for 2-3 minutes, the oil from the coconut releases.
4.Now add the cashew nuts and cardamom powder and mix well.
5.Take it on to a plate and make laddus be careful it will be hot. Enjoy the laddus 🙂
