One day I wanted to make cauliflower manchuria dry but the thought of deep frying them gave me goosebumps. So I wanted to experiment by shallow frying the cauliflower and I were successful in doing it 🙌. They were yummy!. Though I am not that health conscious I do eat deep fried stuff sometimes. So for all those people who are health conscious, this recipe is for you. This recipe is similar to gobhi manchuria but instead of deep frying the gobhi, we shallow fry them. Your kids too will enjoy these.
2 cups chopped cauliflower/gobhi florets
1 1/4 tsp chilli powder
1/4 tsp turmeric powder
1 tsp coriander powder
1 pinch garam masala powder
1/2 tsp pepper powder
1 pinch ajinomoto
1/2 tbsp rice flour
1 tbsp conflour powder
1 pinch red food color(optional)
Salt to taste
2-3 tbsps oil
1. Mix all the above ingredients with 2 tsps water and add the cauliflower florets and combine everything well.
2. Marinate for 30 minutes.
3. Take a pan and add 1 tbsp oil, after the oil gets hot, add the cauliflower florets few at a time. Fry on medium high flame for 2 minutes, turn and fry for another 2 minutes adding little oil if it gets too dry.
4. Now lower the flame, place a lid on the pan and let the cauliflower cook. Occasionally open the lid and turn the cauliflowers. Check the cauliflower by breaking with spoon. It should be slightly hard. DO NOT OVERCOOK IT.
5. Open the lid and fry the cauliflower on medium high again for 1 minute.
6. Serve hot with ketchup.
