On this auspicious occasion of Raksha Bandhan make these Burfis which are soft, creamy and melts in mouth. Make them for your loving brother and I am sure you will notice a big smile on his face, a perfect way to celebrate festival.

We wont get mawa in uk. So I have made mawa with ricotta cheese.
To make mawa, ricotta cheese is mixed with milk powder and cooked in ghee till it forms soft dough.

Usually ricotta cheese is made by boiling milk, heavy cream and salt. Then lemon juice is added to it and the milk gets curdled. The curds are then drained on a muslin cloth. The remaining milk curd mixture is called ricotta cheese.

I have not added saffron, as it was not available for me.😞

250 grams ricotta cheese/mawa (makes approx 12 pieces)

1 1/2 cups milk powder

1/4 cup sugar (add more if required)

1 tablespoon ghee

1 teaspoon milk

1 teaspoon cardamam powder (elaichi)

1 tablespoon chopped pistachios

1 tablespoon chopped almonds (badam)

Few saffron strands (kesar)


1. Mix few saffron strands in 1 teaspoon warm milk and keep aside.

2. In a bowl, add ricotta cheese and milk powder. Mix well.

3. Heat ghee in a non stick pan, add the prepared ricotta cheese mixture and saffron. Cook on medium low flame by stirring continously until the mixture starts leaving the sides of the pan and forms soft dough.

4. Cool the dough till it reaches lukewarm. Then add sugar and cardamom powder. Mix well till the sugar melts.

5. Transfer the mixture on to a greased tray and press firmly. Make approximately 2 inches thick burfis.

6. Let the burfis sit for 2 hours before cutting into squares. Garnish with pistachios, almonds and saffron strands.
